Enjoying a bit of celebrity after having been featured on the Food Network’s “Unwrapped,” the Idaho Spud Bar is a chocolate-marshmallow creation inspired by … a potato? First manufactured in 1918, the Idaho Spud Bar is a blob of vaguely cocoa marshmallow covered with a layer of chocolate and then sprinkled with coconut, resulting in a flavor as odd as its name.

But, wherefore the spud? It’s certainly shaped like a potato. And, it is from Idaho. What else? You won’t find any answers at www.idahospud.com, but you will find ordering information, recipes for cooking with the Spud, a fan club and a dancing Spud Bar mascot that would give Twinkie the Kid a run for his money. Wash one down with a can of Moxie for a taste you won’t soon forget. Delicious!
